Grilling with real Charcoal

More flavor and easier than you think

For years, we moved away from cooking over charcoal and only grilled outside with a gas grill. We had forgotten how much more flavor using charcoal imparts on a meal.

Our journey began with us buying a mini charcoal grill from Walmart to do hot dogs and an occasional burger on. We bought a bag of Kingsford Match Light and a bottle of lighter fluid and struggled to get a fire started. Eventually, we got better at it and for a few months, this is where we stayed as it relates to grilling. We noticed that our food was a bit better, but we still found ourselves gravitating back to our easier to use gas grill.

Everything changed when we bought a Weber Charcoal Grill. This isn’t anything fancy. We didn’t spend hundreds (or thousands) to get a kamado-style ceramic grill or a Traeger. We went with the tried and true Weber that has been in American backyards for decades.

At this time, we also graduated from Kingsford to using lump charcoal. Initially, we had very mixed results getting a fire going and burned down to usable coals. The solve? A lump charcoal chimney and using fire starters.

The final piece of our puzzle was the addition of mesquite chunks. Using mesquite, or another smoking wood, imparts amazing flavor into whatever we throw…
